Baked Clams 1-1/2 tablespoon butter 2 tsp minced onion 1 tsp garlic (or more, to taste) 2 tbs flour 1/2 cup clam juice 1 (10 1/2 ounce) can minced or whole clams, undrained 1/4 tsp salt 1/4 tsp dried oregano 2 tbs minced fresh parlsey About 3/4 cup seasoned bread crumbs 16 clean clam shells (though if you use a mini-muffin pan that work too) Paprika Optional: 2 slices uncooked bacon, chopped Preheat Oven to 450 degree. Heat butter in a skillet and saute onion unti tender. Add in garlic and saute for a minute more. Blend in flour. Stir in the clam juice and cook until thick and bubbly. Add the undrained clams, salt, pepper, oregano and parsely.. stir well. Add enough bread crumbs to desired consistency; start with 1/2 cup bread crumbs and add more, a tablespoon at a time. The mixture should not be too thick or dry. Spoon the mixture into the shells or the muffin pan. Sprinkle the tops with paprika. Top each with a little uncooked bacon (if desired). Bake for about 10 minutes or until mixture is bubbly and bacon is cooked.
